Preheat oven to 250.
Mix dry ingredients, except for the fruit, together in a large bowl. Melt coconut oil over stove. Pour coconut oil, olive oil, and vanilla over the dry ingredients and stir.
Spread mixture over baking sheet (one with edges is preferable). Bake for 1 hour, stirring every 20 minutes. For the last 20 minutes, sprinkle the chopped fruit over the mixture and bake.
After taking the granola out of the oven, let it sit until it cools to allow it to form clusters.
